Crockpot potato soup

32 oz package frozen shredded hash browns
4 cups chicken or vegetable broth
8 oz cream cheese, room temperature and cubed.

put hash browns in crockpot, pour broth over, and put cream cheese on top. Cook low 6-8 hours or high 4 hours. For last hour, add 1 1/2 cups shredded cheese, and I added some cubed leftover ham. When serving, add more cheese or a dollop of sour cream if desired. I also added some pepper and a bit of dry mustard the last hour.
