Sift together: 3 cups flour; 1 tsp baking powder; 1 tsp. baking soda; 1 tsp. salt; 1 tsp. cinnamon
Beat 2 eggs; add 2 cups sugar
Add 3/4 cup veg oil; 4 cups chopped apples to flour mixture
Fold in egg mixture; add 3/4 - 1 cup chopped nuts (walnuts or pecanssS)
Bake at 350* for 1 hour in 9x13 pan
Tastes best if allowed to cool completely or even set overnight - no icing necessary
NOTE: this is very dry batter, press in place with rubber spatula - moisture comes from apples as they bake.

This recipe is ver6 similar at BJs but makes a smaller cake.
Lorraine’s Apple Cake
2 cups diced apples
1 cup sugar
1 egg
Whisk egg a little. Mix in apples and sugar. Let stand about 5 minutes.
Add:
1 cup flour
1/2 teaspoon baking soda
1/3 teaspoon salt
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 cup chopped nuts, I use pecans
Sometimes I sprinkle a bit of sugar and cinnamon on top.
Spread in greased 8 x 8 pan. Bake at 350 for 35-50 minutes.
