1T. butter
1 small onion, finely diced
2 C. thinly sliced Yukon Gold potatoes
1 C. thinly sliced carrots
3 C. chicken broth and 2 C. cooked chicken, chopped
1/2 tsp. salt
1 T. dried parsley
1 C. milk and 1/4 C. flour, combined in a small bowl
1-8 oz. cream cheese, well softened
Melt butter over med. heat. Add onion and saute 3-5 minutes.
Add potatoes, carrots, chicken broth and salt. Bring to a boil, reduce heat, cover & cook for 15 mins.
Add parsley and chicken and heat thru, then add milk/flour mixture to pot.
Add very soft cream cheese chunks, stirring until it's completely melted into the mixture.
Can substitute 8 oz. container of onion/chive cream cheese. Celery, if you wish, or bacon or ham.
