Creamy crockpot potato soup

2 1/2 cups shredded potatos, or 20 Oz pkg of Simply Potatoes shredded hash browns (I used the simply potatoes, it was in the aisle with the eggs)

29 Oz. Chicken broth (vegetable broth should work also)
pinch of salt and pepper, to taste

2 cups whole milk

1 cup sour cream

1 cup shredded cheddar

1/2 cup all purpose flour, or cornstarch or instant mashed potatoes 

In 6 qt or larger crockpot add shredded potatoes, broth, salt and pepper, gently stir. Cover and cook on high 3 hours or low 6 hours. 

Whisk together milk, sour cream, cheddar and flour. Pour mixture into the potato mixture and stir. Cover again and cook on high 30 minutes or low one hour.

Serve garnished with more cheese and/or sour cream as desired. It was on the bland side, so we added more salt and pepper.
