KETO CHOCOLATE SEED TREAT
Zero Sugar (Sugar Free) Chocolate Chips - 9 oz. bag
5 cups seeds - sunflower & pumpkin seeds (roasted and salted)
3 Tablespoons of Refined Coconut Oil (to help thin out the chocolate)
1 teaspoon vanilla extract
Melt chocolate with oil...either in the microwave in 15 second increments, or in a double broiler. Pour over the seeds and mix well. Spread thin on parchment paper on cookie sheet. Put in freezer for 15-20 minutes. (I kept mine in freezer).
Tip: It's best to break off a piece and hold it with a paper towel, as the chocolate melts easily in your hands. I did not use as many seeds as he did and it was just fine. I used 3 cups. I think it would be even better to add a little kosher salt before it sets up, but who needs the extra salt, right?
