Zucchini Slice

Oven at 350
Pan size about 9” x 13”, lined with baking paper.

Beat 5 eggs i sometimes use 6 if they are not large, add 1/4 cup vegetable oil, and then 1 cup SR flour. pepper to taste, I don’t add salt the ham/bacon is salty enough for us.

a total of about 3/4 pound of grated zucchini and carrot, more zucchini than carrot, and grated on the largest size of the box grater not fine. OR you can chop with a food processor, but it doesn’t take long to grate, I just cut each end of both carrots and zucchini off, no peeling
Add small sliced leek, or onion powder if you don’t have leeks.
4 oz of chopped bacon meat, or ham
mix together all the veg into to egg/flour mixture, then stir in 1 cup grated cheese, I use tasty, or the kind with 3 cheese mix.

Turn into the lined pan, bake about 30 mins, check, often  I leave for up to 40 mins
It needs to be set in the middle.

THIS IS VERY FORGIVING RECIPE, the amounts can be varied, more ham added, more cheese  And as long as it looks like it will hold together it should  be fine - I cut into brownie sizes, and put into ziplock bags, and freeze them. Nice with a little ketchup or sweet chilli sauce too
